Combatting colds, banana bread RECIPE, rain doesn’t stop us

First off.  

Bodhi has the makings of a potentially nasty cold.  Every time that kid sneezes, Trout and I run in the other direction as snot is shot out across the room at us.  Gross? Yes. Truthful? Most definitely!

As far as dealing with bugs in our house I am not apposed to medicine when needed…but, I would much rather do everything in my power to help assist the body in fighting bugs rather than combating the symptoms.

My favorite go-to remedy for my family is Elderberry Syrup.

I am so thankful to have found this woman and her blog. I’ve used quite a bit of her recipes and ideas with great success.  

If you are interested in making your own elderberry syrup rather than store bought, (which is SUPER expensive compared to homemade).  I bought my dried elderberries HERE.

*quick note: I used raw honey this go-around.  However, if you are pregnant, nursing, or using it with little ones with compromised immune systems I would recommend using agave.  I don’t normally like to use agave nectar in recipes, but this application is a favorite with the littles.


I have mentioned recently, that sweets and I are not friends.  However, my boys LOVE quick breads and how can I deny them just because their mom is having some crazy aversion to something that I can only chalk up to the fact that I’m not running nearly as much and my body isn’t craving the extra “seratonin-like” kick it gets from sugar.

I’m always looking for ways to boost the nutrition in Bodhi and Trout’s diet without compromising flavor.  Thankfully, quick breads are super simple to accomplish nutrition and flavor in one go.

I used a banana bread recipe that my mom used for us growing up and then modified it a TON.


I wanted to put a recipe card in at the end, however, the app is having a problem so here is my less pretty version of the recipe write up 😉

Best Ever Banana Bread:

3 medium bananas or 4 small, mashed

3/4 cup coconut palm sugar

2 large eggs

1/2 cup grapeseed oil

1/2 almond milk + 1 tsp. apple cider vinegar added (vegan buttermilk)

1 tsp. vanilla extract

2 cups gluten free flour, (I use THIS brand)

1/3 cup golden flax seed ground.

1/2 cup raw walnuts, toasted in preheating oven then chopped to desired size

1 tsp. salt

1 tsp. baking soda

1 cup toffee bits (okay, so this isn’t healthy, but it makes the bread buttery, salty, and slightly sweeter)

To make: 

Preheat oven 350.  

Grease 2, 9 in. loaf pans

Combine sugar and oil until combined well.  Then add eggs, again mixing until combined.  Add banana, vanilla, and “vegan buttermilk” stir until mixed well.

In separate bowl combine dry ingredients (except for toffee and walnuts), mixing well before adding to wet.  

Last stir in toffee and walnuts.  Divide batter between two loaf pans evenly.  Put in oven for 45 minutes or until baked all the way through, (I have a convection oven so my bake time is typically shorter than what is called for in a recipe…you might need an hour or even an hour and fifteen minutes.

The verdict from my boys is that the bread is yummy.  I had a little bit myself and I was even okay with grabbing more 😉

So besides making elderberry syrup and banana bread, a rainy day calls for a bike ride with my Trout.


Rain or shine, my littlest little loves to bike and a little bit of rain, (well, actually right before we went out a torrential downpour) won’t stop this kid.


I love being out in the rain too.  Running while it’s snowing huge flakes and the world around me is super silent and running in rain, (without the presence of wind) are my preferred running weather.

However, now that my treadmill is fixed! (enter excitement)…I will be back to the hamster wheel during the week days.  Life is a lot less chaotic when I can get a run in while the boys are still asleep.  I know they don’t mind riding in the stroller, but with homeschooling and everything else…it really does eat up our day adding a run in.
