Too good not to share!

Have you ever had something so good you couldn’t keep it to yourself?

I have; many times!

Today I did something I rarely do…bake a pie; well actually, a gallete.  I am so glad I did.  Danielle Walker over at Against All Grain is a culinary genius and she has won me over again with another delicious, paleo recipe.

Let me make sure this is known…this is not my recipe! I did not create this gallete.  However, I did get the gumption to get in the kitchen and bake.  There is not a single belly in our household that isn’t dancing with joy at this very moment!

What do I love about this recipe?

It’s made with cashew flour!

Don’t have cashew flour?  No worries! make your own.  I have a blendtec blender that makes anything into flour.  The end result of using cashew flour is a buttery, slightly salty, slightly sweet crust that has a great crumb, flaky like a pie crust should be…but, also holds up to the blueberries inside.  This recipe has me loving cashew flour, loving making this gallete, and anxious to try it with other fruits like apples, peaches, raspberries, huckleberries…this list goes on 😉

Oh yea, and vanilla bean coconut ice-cream is a must.  We didn’t have any on hand so I rallied the boys and pups and we biked up to our local grocery store, (the one that is further away, but has the ice-cream we needed; rarely do I ever get to do all of my grocery shopping at one place…awe, the life with food allergies).

These two rode the entire way there and back, which rounded out to be a little over 4 miles.  They love to bike and I love the fact that they are happier, nicer human beings when they have gotten their energy out; much like their momma!

My silly 60 lb. dog thinks he is a lap dog 🙂  He is known to crawl in your lap if your basking in the sun like I was here.  After my long run on Saturdays I like to sit outside in the sun while the boys bike around in front of me. I get to relax and they get their energy out 🙂

    This is an amazing recipe! Very easy to make and absolutely delicious. The ingredients seem out of the ordinary but I found them all at our local grocery store. Yum yum yum, and I am a harsh critic!

      Deb, I am so glad to hear! I love Danielle Walker’s recipes. She hasn’t made single thing that my family and myself hasn’t liked! You should check out her website if you haven’t….she has a ton of free recipes as well as cook books for sale.
